INGREDIENTS

  • 6 large eggs
  • 1 cup goat milk (prepared from powder)
  • 1 cup all-purpose flour
  • Dash of salt
  • 1 teaspoon vanilla extract
  • 5 tablespoons goat ghee or butter
  • Optional toppings: powdered sugar, maple syrup, fresh fruit

METHOD

  1. Preheat your oven to 425°F (218°C).
  2. Place a large (approximately 10x10") cast iron frying pan in the oven while it preheats.
  3. In a blender, combine the eggs, goat milk, flour, salt, and vanilla. Blend until smooth.
  4. About 1 minute before adding the batter, carefully remove the hot pan, add the ghee, and return it to the oven to melt.
  5. Once the ghee is melted, pour the blended batter into the hot pan.
  6. Return to the oven and bake for 22–27 minutes, or until puffed and golden brown around the edges.
  7. Slice and serve warm. Top with powdered sugar, maple syrup, or fresh fruit as desired.
