Creamy Rice Pudding with Dried Apricots

Ingredients

  • ¾ cup white rice (see note below)
  • 1½ cups cold water
  • 2 cups prepared Good Goat Milk
  • ⅓ cup white sugar
  • ½ cup dried apricots, chopped
  • 1 egg, beaten
  • ⅔ teaspoon vanilla extract
  • ¼ teaspoon salt
  • 1 tablespoon butter
  • Ground cinnamon, for serving

To prepare 2 cups of goat milk: Mix 2 scoops (56 g) of Good Goat Milk Powder with 2 cups (480 ml) of water. Stir well until smooth.

Good Goat Tip

Rice pudding naturally thickens as it cools. For an extra creamy consistency, stir in a splash of prepared Good Goat Milk before serving. If you prefer a softer texture, add a little more milk while cooking until the pudding reaches your desired consistency.

Method

  1. In a small bowl or jug, whisk together the reconstituted goat milk and set aside.
  2. In a medium saucepan, combine the rice and water. Bring to a gentle boil over medium heat, then reduce to low, cover, and simmer for 20 minutes until the rice is soft and the water is absorbed.
  3. Add 1½ cups of the goat milk, sugar, and salt to the cooked rice. Cook over medium heat for about 15 minutes, stirring frequently, until the mixture thickens and becomes creamy.
  4. Stir in the remaining ½ cup of goat milk, the beaten egg, and the chopped apricots. Continue cooking for 2 more minutes, stirring constantly to avoid scrambling the egg.
  5. Remove from heat and stir in the butter and vanilla extract. Spoon into bowls and sprinkle with cinnamon before serving.
  6. Serve warm, or chill for a refreshing treat later.
