Roasted Cauliflower Fritters with Chevre

Roasted Cauliflower Fritters with Chevre

These roasted cauliflower fritters with goats cheese come together in minutes and pair perfectly with a dollop of hummus and a dash of lemon.

Prep time: 15 minutes
Cook time: 5 minutes
Makes: 8 fritters

INGREDIENTS:

  • 2 c. Roasted Cauliflower florets (roughly chopped)
  • 4 large eggs
  • 1/2 c. prepared GGMC Goat milk + a little extra
  • 1 c. flour
  • 1 small log goat cheese (Chevre)
  • 2 cloves crushed garlic
  • 1 tsp. ground turmeric
  • Lemon zest (about 1/2 a large lemon)
  • Chilli flakes (as much as you like)
  • Chopped mint (as much as you like)
  • Chopped parsley (as much as you like)
  • Salt + Pepper to taste


METHOD:

  1. Roast cauliflower
  2. Whisk eggs and GGMC Milk in a bowl.
  3. Add flour and mix lightly.
  4. Add Chevre, garlic, turmeric, lemon zest, chilli flakes. Mix.
  5. Add mint, parsley and cauliflower. Mix again.
  6. If too thick and ingredients wont mix, add a little more milk
  7. Season with salt & pepper.
  8. Heat olive oil in a frypan until hot
  9. Fry big spoonfuls of the batter , turning to cook on both sides
  10. Serve with lemon wedges (and hummus if you like)
